The A-73 Legacy 8” chef’s knife was the winner of the prestigious Red Dot international design award in 2024, and is Ryde’s signature knife. It’s forged from 73 layers of Damascus steel with a ST650 powder steel core, and carries both resilience and razor-sharp elegance. A cryo-hardened edge at 63 HRC (hardness scale) offers lasting sharpness, while the contoured handle in figured French olive wood adds warmth and weight to every move. Balanced at 198 grams, it feels familiar from your first grip.
The A-73 series is Ryde’s premium collection, with each knife designed for its specific purpose. For example, the A-73 chef’s knife has a balance point higher up on the blade to benefit a high pinch grip, while the A-73 slicing knife has a balance point further back to support a sturdier grip on the handle combined with a light pinch grip. The handles are made from smooth French olive wood, and for the blade, Ryda uses their custom ST650 steel as the core material. A-73 knives have a score above 840 on the CATRA test of knife edge sharpness and longevity. This series is designed for professional chefs, especially those who have been in the industry for a while and are looking to upgrade their knives. However, they are also perfect for new chefs who want to start their career with a set they can keep for many years to come.
