Inspired by Japanese tradition, designed for modern hands, the ST650 nakiri is your go-to for vegetables—gliding through roots and greens with minimal effort and maximum grace. Its flat-edge blade, forged from cryo-hardened ST650 powder steel, ensures clean contact from heel to tip. No rocking. Just precision.

The steel of Ryde’s ST-650 series is a work of art, characterized by the unique pattern on the blade, enveloping Ryde’s proprietary ST650 powdered steel. By heating the Damascus blade, Ryda alters the layers of steel in the knife, revealing a distinctive pattern. The core steel at the center of the blade maintains world-class quality and achieves a score of 820 when tested on the Catra scale (for edge sharpness and longevity ). ST-650 knives feature a 15° blade edge angle to facilitate easy blade resharpening as needed. The hardness of Ryde’s ST-650 blades ranges from 62-63 HRC, making them among the hardest blades on the market. Furthermore, they are cryo-hardened, one of the most expensive and effective processes for maintaining a knife’s hardness, ensuring exceptional durability. ST-650 handles are crafted from French olive wood that has been meticulously dried, moisturized, dried, and moisturized again until it attains the desired hardness. These handles are carefully shaped to provide a comfortable and secure grip with perfect balance.
